
DESCRIPTION
Tree widespread especially in the hills and in the foothills, it flowers from mid-June to early July with considerable production of monofloral pollen.
The taste of honey is characteristic in its aroma, tannic on the palate with a bitter finish.
More or less dark amber in colour, it depends a lot on the presence of wood honeydew, it becomes brown when it crystallizes.
This honey is produced with the utmost respect for the environment and the naturalness of ecosystems, according to the principle of nomadism: moving the hives according to the different blooms during the year.
Cheese pairing: fresh dairy products, to be tried in an explosion of contrasts with gorgonzola or cow's milk blue cheeses.
