DESCRIPTION
The meat must follow a manufacturing process which begins with sprinkling it with spices, flavourings, salt, then leaving it to rest in a low-temperature place, so as to allow an absolutely effective flavoring process and then stuffing it into natural suet casings.
After having tied it tightly with string, the coppa must first go through a drying period of about 15 days and then must be aged in the cellars for about 6 months.
