Gorgonzola DOP is a soft, fat, raw cheese produced exclusively with pasteurized whole cow's milk from farms located in the provinces of the territory of the Consortium for the protection of gorgonzola cheese.
Of creamy consistency, with a united paste without holes. On the palate it is soft and amalgamated, with easy melting in the mouth.
Absence of cereals containing gluten and their derivatives.
